Jobs Desc: 

  • A strong foundation in cooking techniques, flavor profiles, and food presentation is essential. This includes proficiency in various cooking methods, knife skills, and knowledge of different cuisines.
  • Understanding the principles of food science, such as how ingredients interact, cooking processes affect flavor and texture, and how to troubleshoot recipes, is crucial for developing new dishes and products; Need to have a finely tuned palate and the ability to assess the taste, texture, aroma, and appearance of food products. This involves conducting sensory evaluations and making adjustments to recipes based on feedback.
  • The ability to think outside the box and come up with innovative recipes and food concepts is essential in R&D. This involves experimenting with different ingredients, flavors, and techniques to create unique and appealing dishes; R&D involves precise measurements, meticulous record-keeping, and careful observation of cooking processes. Attention to detail is essential for ensuring consistency and quality in recipe development.
  • R&D Chefs need to stay updated on culinary trends, ingredient innovations, and industry developments. Strong research skills are necessary to gather information, analyze data, and incorporate new ideas into recipe development
  • R&D projects often involve multiple stages and collaborators, so strong project management skills are important for coordinating tasks, setting timelines, and meeting deadlines.

 

Jobs Spec:

  • Prior experience in restaurant management, preferably in a similar fast-casual dining environment, is essential; Expertise in Franchise Restaurant is a plus
  • Young & talented, high confident, responsible, able to run and manage large team, outgoing personality, strong people skills
  • Leadership experience, with a track record of building and leading high-performing culinary teams; Have expert knowledge about COGS report and food costing
  • Understanding food safety regulations, labeling requirements, and industry standards is important for ensuring that R&D projects comply with legal and regulatory guidelines (HACCP).

 

Spec Request:

  • Profile for Young Talent Chef currently handling multiple operations, or for current restaurant group company Background; Has previous experience doing multiple opening and pre-openings shops, brands, outlets, or hotels
  • Expertise in Franchise Restaurant is a plus
  • English proficiency is mandatory; Korean speaking is an advantage
